This delicious version of spicy eggs on a bed of onions and coriander – is the perfect hangover remedy. Mop it up with a crusty loaf of bread – and wash it down with a glass of chilled beer, followed by a long nap 🙂 – and you will wake up as good as new!
The recipe calls for 5 large onions, finely chopped – a teaspoon each of ginger and garlic paste, 1/2 a teaspoon of bright red chilli powder,1/2 a teaspoon of turmeric powder, 2 green chillies slit through the middle and a bunch of chopped coriander.
Fry the onions and green chillies in a couple of tablespoons of oil till translucent. Add the ginger garlic paste and fry for 20 seconds
Sprinkle the red chilli powder, turmeric powder and salt and give it a good stir.
Add a bit of water to amalgamate the onion paste.
So that’s what it all needs to look like before we add the eggs!
Now break the eggs evenly all over the paste and cover and cook it on a low heat for about 7 to 10 minutes till all the eggs have set.
And, Voila! Your Khagina is ready to be devoured 🙂
